Do you love Brussel sprouts or do you love Brussel sprouts? Roasted Brussels sprouts especially are my favourite. The caramelization adds so much tasty earthy and nutty flavour, accompanied by a tangy mustard ailoi makes them irresistable.
You will need...
1 ¼ lbs Brussels sprouts, trimmed and halved
2 Tbsp grapeseed oul
2 tsp yellow mustard seeds
1 tsp garlic powder
¼ tsp black pepper
½ cup mayonnaise (or you can make your own)
3 Tbsp Dijon mustard
1 Tbsp lemon juice
1 tsp honey
Preheat the oven to 425°F. Line a baking sheet with parchment paper.
In a medium bowl, toss together Brussels sprouts, grapeseed oil, mustard seeds, garlic powder, salt + pepper. Spread them in a single layer on the baking sheet. Roast for 20-22 minutes, until golden and crispy...don't worry if they look a little burnt, it's my favourite part.
Meanwhile, whisk together the aioli ingredients in a small bowl. Season with salt + pepper. Serve alongside the roasted Brussels sprouts.
Options - add some parsley or dill to your aioli to brighten it up with some colour.
